Quick and Easy Breakfast: High-Protein Toast with Farmers Cheese Spread

This quick and easy breakfast/snack is in constant rotation at my house.

When in Poland my aunt goes to the market at 6 am to pick up fresh farmer’s cheese and there is truly nothing like it. It’s perfectly creamy, tart, and satiating. There are many variations to this recipe so you can personalize it as much as your heart desires. If eating this for breakfast I like to top it with a boiled or poached egg, it pairs so well.

Slice& Dice

To start off this recipe, I like to finely dice all of the veggies I’ll be using. To get the finest dice I recommend starting with thinly sliced circles. You can then slice horizontally and vertically to achieve the fine dice on the right.

Ingredient Options

The farmer’s cheese is the base of the spread we’re making and the one you choose will impact the taste. I’m lucky enough to have a Polish store nearby and can pick up a Polish brand. Poltlsty means it has less fat. This mainly impacts the texture and makes the cheese more crumbly. If opting for a lower fat option you’ll likely have to supplement with some more Greek yogurt or sour cream to achieve a creamy and spreadable texture.

When I started making this recipe it hit me that I didn’t have sour cream at home. As a workaround, I decided to try using Greek yogurt and mayonnaise. I thought using just Greek yogurt would make the spread too tart, and I’m happy I did! The perfect ratio of yogurt to mayo here is 2:1. Basically for each tbsp of mayo, you should be using two tbsp of yogurt. This Polish brand of mayo is truly my all-time favorite. It’s super creamy and has the perfect taste to it if you aren’t a huge fan of traditional American mayo. But again, if you don’t have a Polish store by you, use what you have!

Mix Her Up!

You’re now ready to mix your spread! Use the amounts as a suggestion and remember this, you can always add but seldom take out. Add the seasonings and sauces slowly to ensure you get the perfect result. I ended up adding some extra yogurt and mayo to get everything to hold together better. To make it a little more creamy I added a splash of oat milk ( once again- what I had on hand) to get the mix a little more creamy. The texture should end up like a creamy cottage cheese.

The base of this toast can also be swapped out to your preference. I picked up some sunflower seed bread this week and had extra frozen slices in my freezer that I wanted to use up. When having this for a snack or wanting to keep it a little more low carb it also goes great with rice cakes. You can even use the rice cake like a chip and scoop it out of the bowl chips and guac style.

Farmers Cheese Toast

My Babcia whips this up for breakfast every time I visit her in Poland. This satiating toast can be eaten for breakast, lunch or even a quick snack. The crunchy cucmbers and radishes keep the texture interesting and taste phenomenal. The best part of this dish is how versatile it is! I made this recipe with what I had on hand but there are so many alternatives you can use to suit your taste.

Ingredients
  

  • 225 grams Farmers Cheese
  • 4 whole Radish
  • 1/2 large Cucumber
  • 1/2 large Tomato
  • 2 tbsp Sour Cream
  • 2 tbsp Greek Yogurt
  • 1 sprig Green Onion
  • 1.5 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp milk or cream Optional** If you would like your spread to be a little looser

Instructions
 

  • Wash your veggies and remove the ends of both your radish and cucumbers.
  • Finely chop your radish, cucumber, and green onions. Place into a mixing bowl, saving some of the greens of the onion for garnish.
  • Mix all your ingredients until thoroughly combined. Add the optional milk or cream here if your mixture is too thick. TASTE TEST!!! Adjust any seasonings
  • Toast your bread
  • Slice your tomato
  • Assemble your toast by spreading a healthy spoon of the cheese mixture to the top. Add your tomatoes and optional green onion on top with an additional crack of black pepper and salt. Enjoy!

Notes

This recipe is so great because you can easily swap the ingredients to be more to your preference. When having this for breakfast sometimes I’ll add a boiled or poached egg on top!
